Instructions
Prepare all vegetables: cube yam and sweet potato, slice raw banana, slit brinjals, trim flat beans.
Time: 5 minutes
Make a masala paste: grind coconut, peanuts, sesame seeds, green chili-ginger paste, sugar, and salt.

Stuff the slit brinjals with the masala paste.

Heat oil in a heavy-bottomed pot. Add mustard seeds and asafoetida.

Layer vegetables starting with the hardest (yam, sweet potato) at the bottom.

Add stuffed brinjals and remaining masala between layers. Sprinkle with salt and sugar.

Cover tightly and cook on very low heat for 40-45 minutes. Do not stir — let it cook undisturbed.
